Life too hectic for a good breakfast, try jelly bar sandwiches
Is your kid cranky, unfocused and tired? Are you? Consider this: In a 2005 study published in the Journal of the American Dietetic Association, researchers analyzed 47 different studies on the effects of breakfast. They concluded that kids who eat breakfast are less likely to be overweight and have better learning abilities and fewer behavioral problems. Grown-ups benefit, too. There are plenty of options for busy families who may not have time for a sit-down breakfast in the morning. Here are a few ideas to get you started.
SMOOTHIES
Make smoothies by blending yogurt, frozen fruit and a drizzle of honey and freeze in small, microwave-safe containers . Pop in the microwave for 10-15 seconds on high and stir, then spoon into a glass. The smoothie maintains its thick texture and can be eaten in the car if you're really running late .
BANANA SHAKE
This is a great way to use overripe bananas. Put a peeled and sliced banana into a blender; add a cup of milk and blend. The banana and milk froth into a milkshake like drink, and the extra sugar in the overripe banana sweetens it up perfectly.
FRUIT TO GO
Chop up fruit such as bananas, apples and melon and toss with strawberries, blueberries, orange slices and grapes. Portion into small containers and refrigerate. Grab one and a granola bar on the way out the door, and you're good to go.
QUICK TAQUITOS
Keep a container of pre cooked scrambled eggs in the fridge for this easy breakfast entree. Lay a portion of the eggs on a corn or flour tortilla with cheese, microwave for just a few seconds and roll into a taquito.
Who says the classic peanut butter and jelly sandwich is just for lunch? A PBJ sandwich takes just a minute to make and provides protein, vitamins, minerals and essential fats for growing brains. It's a handy take-along breakfast, if you can handle a few crumbs. For a treat, you can try Peanut Butter and Grape Jelly Bars.
